Purpose of Job: Under the direction of the Camp Director and with the assistance of the Camp Chef Aide, the Camp Chef is responsible for planning menus and preparing all meals and snacks for the campers. Prepares continental breakfast and snacks. Maintains cleanliness and sanitation of the Food Science Laboratory and follows HACCP procedures.
Essential Functions of the Job:
ˇ Plan menus for continental breakfast, lunch, and snacks.
ˇ Supervises the Camp Prep Cook.
ˇ Prepare shopping lists for the Camp Assistant.
ˇ Lead campers in preparation of their lunch meal; prepare continental breakfast and snacks for campers and staff.
ˇ Maintain organization, cleanliness and sanitation of the Food Science Laboratory, following all ServSafeŽ, HACCP procedures and St. Louis County Health Department standards.
ˇ Maintain positive relationships with diverse groups of people, including administration, staff, volunteers, campers and their families.
ˇ Maintain an environment that ensures campers’ safety and well being.
ˇ Ensure Fontbonne University policies & procedures are followed at all times.
Duties and Responsibilities:
ˇ Practice the concepts of mutual respect, caring, honesty, and responsibility in positive communications and interaction with campers, parents and staff.
ˇ Attend camp orientation and training.
ˇ In collaboration with the Camp Director, develops camp menu based on the continent of the week.
ˇ Expand and standardize recipes for all meals.
ˇ Prepare recipes for Camp Cookbook.
ˇ Prepare detailed shopping lists for Camp Assistant.
ˇ Ensure that food safety and sanitation procedures are followed.
ˇ Maintain and document temperatures during food preparation, holding and service.
ˇ Maintain organization of freezer, refrigerators, and dry storage including proper labeling and dating of food items.
ˇ Maintain cleanliness and sanitation of all food service equipment.
ˇ Prepares continental breakfast and snacks for campers and staff.
ˇ Lead campers in preparation of lunch, including clean up.
ˇ Responsible for ensuring diverse program experiences are provided for campers each day.
ˇ Provide campers with opportunities to build independence skills.
ˇ Demonstrate the ability to relate to children, their families, and camp staff.
ˇ Use positive verbal and non-verbal communication with children to build trusting and stable relationships.
ˇ Responsible for insuring the safety of all campers while in the Food Science Laboratory.
ˇ Report all repairs, incidents, and accidents to the Camp Director.
ˇ Keep a neat and clean appearance in chef uniform daily.
Reports to: Camp Director
Education: Associate Degree in Culinary Arts; or Bachelor’s degree with cooking experience, preferred.
Experience:
ˇ Experience working with children preferred
ˇ Strong communication, organization and time management skills
ˇ Current certification in American Red Cross Adult/Child CPR/AED and First Aid or its equivalent required. If not currently certified, must pass certification within one week .of employment
ˇ Must demonstrate ability to follow directions, show leadership skills, and be self-motivated.
Other Requirements:
ˇ Current Hep A Vaccination.
ˇ Negative TB test.
ˇ Must pass Department of Health and Human Services child abuse screening, criminal records check and Child Care Worker Registry.
ˇ Current ServSafeŽ certification.
Salary: $11.50-13.50 per hour
