US Foods and Fontbonne University Partnership

Program Goal and Outcomes

  • To develop student skill sets related to clinical nutrition — nutritional assessments, care planning, follow up charting, continuous quality improvement, client education and menu planning — so as to enhance the quality of life for residents or clients served in long-term or assisted living communities.
  • To enhance the student’s understanding, knowledge and skill sets for food service management — employee recruitment and hiring skills, employee training, employee supervision, food purchasing and production food safety and sanitation, meal service financial accountability, and customer service.
  • To broaden the student’s vision of new trends in person-centered senior care, with hands-on experience working in skilled households and/or neighborhoods.
  • To develop the confidence of the student to be an active and well-respected professional team member in the senior care field.
  • To educate dietary managers to think critically and act ethically while assuming responsibility in the foodservice industry.
  • To provide support and learning experiences that will facilitate student completion of the program.
  • To provide support to encourage students to apply to take the certification exam.

Your decision to enhance your current skills and knowledge is satisfied by this specialized continuing education program and supported by the dedicated, professional faculty at Fontbonne. The program has both classroom and field experience components. The field experience is appropriately precepted by Registered Dietitian Nutritionists and CDM’s and has a required minimum of 150 hours. Students are eligible for ANFP membership. Graduates are eligible for the credentialing exam and active ANFP membership.

A Registered Dietitian must directly supervise a minimum of 25 of the 50 nutrition-related field experience hours and coordinate the entire 150 hours. The program will be housed in the Department of Family & Consumer Sciences which has a dietetics program that has been accredited by Accreditation Council for Education in Nutrition and Dietetics (ACEND).

This course is a non-credit continuing education course, the first of its kind at our university. Students will apply only to take the course and will not be enrolled in the traditional system.

Students will utilize the Fontbonne University Jack C. Taylor library, class syllabus, classroom resource library and computers at their sites to help support their learning needs.

Program Admission Requirements and Cost

  • To enter the program, you must have a high school diploma or equivalent. Those who do not hold either of these will be referred to local sites that provide GED certificates.
  • No admission test is required for this program.

Program cost details:

  • Nine month certificate program cost total: $1,475.
  • Required textbooks: $285 (Nutrition $140 and Management $145)
  • Food Service: $200 (20 weeks — lunch and beverages)
  • Course fees: $990 (includes faculty, handout materials, exam review session, and ServSafe certification)
